Leche Flan


10 egg yolks
1 can condensed milk
1 can evaporated milk
4 tablespoons sugar, for caramelizing
2 teaspoons vanilla

Put egg yolks in a big bowl and gently mix together. Add the condensed milk then gently (to not create bubbles) mix together. Add the evaporated milk and vanilla then gently mix together.

Melt sugar in the flan pans or a heavy bottom sauce pan on low heat until it caramelizes but not burnt.  Set aside to cool and then pour the Lechen Flan mixture slowly. Cover with aluminum foil.  Steam for 30 minutes. Let cool. Repeat the process.
