Sponge Method
2 1/2 cups unbleached bread or all-purpose flour
7 tablespoons raw sugar
2 teaspoons active dry yeast
2 cups warm water
12 to 14 tablespoons dry whole milk
1 1/2 cups unbleached bread or all-purpose flour
2 teaspoons sea salt
1/4 cup olive oil
1 egg
bread crumbs
Bake in 350* F preheated oven for 18 to 20 minutes.
Makes about 40 plus pan de sals.
