Mashed Potatoes

3 lbs yellow yukon golden potatoes
1 stick unsalted butter (cut into pieces)
1 cup half & half
salt & pepper

Peel the potatoes and cut into two if too big. Put in a pot with water just above the potatoes. Bring the potatoes to a boil then lower heat and boil for 15 minutes. Remove water using a colander. Transfer to a food processor, then add butter, salt & pepper (to your taste), and pulse until blended.  Add half & half and pulse again until well blended.  Taste.  Add salt and pepper if needed.

Note:  You can also mash potatoes by hand using a potato masher.
