Pastry Cream

Ingredients
1 1/4 cups milk
1/4 cup white sugar
2 tablespoons unbleached all-purpose flour
2 tablespoons cornstarch
1 teaspoon vanilla extract
3 egg yolks (beaten)

Directions

Heat the milk in a saucepan on medium high heat.  Add sugar, all-purpose flour, and cornstarch. Mix well until it thickens.

Add cooked milk mixture a little at a time to the beaten egg mixture, beating each time you add until you've added all of them.  Transfer egg and milk mixture back to the saucepan and cook on low.  Mix very well until fully incorporated.  It's now ready to use as your pastry cream.
