Black Eyed Peas Pork Meatball Soup


2 1/2 pounds
ground pork
1 cup cooked rice
1 cup cooked black eyed peas
1 egg
1/2 cup chopped tomatoes (add to water before)
1/2 cup chopped tomatoes (add to ground pork)
1/2 cup chopped cilantro (add to water before)
1/2cup chopped cilantro (add to the ground pork )
1 tablespoon salt (add to ground pork)
1 tablespoon salt (add to water)
dash of freshly ground pepper
2 cups chunks of carrots
2 cups chunks of sayote or cucumber
juice of one lime

Mix the ground pork, cooked rice, black eyed peas, tomatoes, cilantro, egg, salt and pepper. Mix well with your clean hands and shaped into small balls about 1 1/2 inch in diameter. Set aside.

Boil six cups of water with the tomatoes, cilantro, and salt. Lower heat to medium and then add the meat balls one at a time.  Cook for 30 minutes and then add the carrots, sayote, and juice of one lime

Makes about 30 or more 1 1/2 inch diameter meatballs.
