Pandesal ~ March 17, 2014 LAST EXPERIMENT


1 tablespoon active dry yeast
5 tablespoon sugar, divided
1/2 cup warm water (115 degrees F)

4 cups bread flour
1 teaspoons salt
1/4 cup olive oil or melted butter
2 eggs
1  cup warm milk
breadcrumbs


In a small bowl, mix the yeast, 1 tablespoon sugar, and warm water. Cover with a kitchen towel and let rise for 10 minutes.

In a big bowl, combine 4 cups of all-purpose flour, 4 tablespoons sugar, and salt. 

Add the yeast to the flour mixture with warm milk, oil or melted butter, and eggs to the flour mixture. Blend well until ingredients clump together and form into a dough. 

Knead on a floured surface by hand or use an electric mixer with the dough hook for 10 minutes or until smooth. Form into a ball and put into a greased bowl and let rise for 1 hour in a warm place.  

Punch the dough in the center to deflate. Put on a floured working surface and divide into 4 pieces. Cover the pieces of dough with a kitchen towel and let rest  for about 3 to 5 minutes.

Flatten and stretch each piece of dough with your hands folding it into itself three times. Roll and shape each piece of dough into a log about 2 inches in diameter. Cut into 1 1/4 inches long.  Roll cut pieces of dough in breadcrumbs and arrange on a lined baking sheet with parchment paper.  Let rise for 30 minutes.

Bake in a preheated 375 degrees F oven for 17 to 20 minutes or until golden brown.
