How to Make Pasta Noodles

Homemade Pasta Noodles

1 3/4 cups all-purpose flour


1 teaspoon salt


2 to 3 eggs


1 teaspoon olive oil

Procedure
In a medium bowl mix all-purpose flour and salt. Make a well in the center. Add eggs and olive oil.  Mix everything together until they can be formed into a dough ball.


Work in a floured surface and knead dough for 8 minutes until smooth sprinkling little flour when dough is too wet and adding little water when dough is too dry. Cover with a damp kitchen towel and keep in warm place to rest for 30 minutes.

Flatten dough with a rolling pin on a floured surface to 1mm in thickness.  Fold flattened dough 3 times on itself.  Cut with a sharp knife 1/8 of an inch. Dust cut noodles with cornstarch or flour.
