Sugar Cookies

Ingredients

1 cup unsalted butter, softened
1 1/4 cups confectioner sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose unbleached flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Procedure
  1. Preheat oven to 375 degrees F,  Cream the butter and sugar until well blended.  Slowly pour the egg and vanilla and beat together. 
  2. Mix the flour, baking powder, baking soda, and the salt in another bowl.  Add to the butter mixture gradually and beat until well blended. 
  3. Make little balls about 1 1/4" in diameter and arrange in an ungreased cookie pan.
  4. Bake for about 10 minutes or until golden brown.  Let cool.
* Makes about 40 cookies.
