German Pancake




3 eggs
1/2 cup milk
1/2 cup bread flour, sifted
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon powder
3 tablespoons unsalted butter
2 tablespoons sugar
lemon juice (optional)
2 tablespoons powdered confectioners sugar

Set oven to 450* F
Use a 10 inch cast iron pan

Beat the eggs in a blender until fluffy.  Add the flour, sugar, vanilla extract, cinnamon powder and mix until well blended or for 5 minutes.

Place butter on cast iron pan and swirl pan around to spread butter. Pour egg mixture in and bake for about 17 to 20 minutes or until golden brown.

Sprinkle confectioner's sugar on top.  Serve immediately.
