Thanksgiving Turkey

























13 pounds young turkey, room temperature
salt & pepper
1 big onion, chopped
2 sprigs rosemary
1 big carrot, chopped
2 stalks celery, chopped
1 stick unsalted butter, room temperature


Bake at 325 degrees Fahrenheit for 3 hours or until thickest part of the leg reads 160 degrees Fahrenheit when tested with a thermometer.


Bring out of the oven and let rest for 20 to 30 minutes or until  the carryover cooking reaches 165 degrees Fahrenheit, the USDA approved internal temperature for poultry.
