Ingredients
3 tablespoons unsalted butter
3 tablespoons unbleached all-purpose flour
2 cups milk, warm
salt & freshly ground pepper
1/8 teaspoon nutmeg
1 cup Gruyere cheese
1 head white cauliflower, cut in florets
1/4 cup Parmgiano Reggiano (Parmesan cheese)
