1 cup butter, room temperature
3/4 cup confectioners sugar, sifted
1 egg
2 1/2 teaspoons almond extract
2 cups all-purpose unbleached flour, sifted
1/2 teaspoon baking powder
1/8 teaspoon salt
1 egg, to brush on top
whole almonds, for topping
- In a large bowl, mix the butter and sugar until blended. Add the egg and almond extract and mix until smooth.
- Add the flour, baking powder, and salt.
- Put dough in the refrigerator or freezer for 10 minutes to make firm.
- Form into 1 inch balls and flatten into a round shaped cookie dough on a greased or parchment lined cookie sheet, 2 inches from each other .
- Put one almond on top of each cookie dough and press in. Brush with egg.
- Keep in the refrigerator for about 10 minutes to harden.
- Bake for 10 to 12 minutes or until golden.
Bake at 325* F preheated oven for 15 to 18 minutes or more.
