Almond Cookies



1 cup butter, room temperature
3/4 cup confectioners sugar, sifted
1 egg
2 1/2 teaspoons almond extract
2 cups all-purpose unbleached flour, sifted
1/2  teaspoon baking powder
1/8 teaspoon salt
1 egg, to brush on top
whole almonds, for topping

  1. In a large bowl, mix the butter and sugar until blended. Add the egg and almond extract and mix until smooth.
  2. Add the flour, baking powder, and salt.  
  3. Put dough in the refrigerator or freezer for 10 minutes to make firm. 
  4. Form into 1 inch balls and flatten into a round shaped cookie dough on a greased or parchment lined cookie sheet, 2 inches from each other . 
  5. Put one almond on top of each cookie dough and press in. Brush with egg.
  6. Keep in the refrigerator for about 10 minutes to harden.
  7. Bake for 10 to 12 minutes or until golden.

Bake at 325* F preheated oven for 15 to 18 minutes or more.
