Sweet Pastry Crust (Pate Sucree)


3 cups unbleached all-purpose flour
1  teaspoon salt
1 tablespoon granulated sugar
8 ounces stick unsalted butter, cut into small cubes
1 cup iced water


Put flour, salt, and sugar in a food processor, then pulse to mix together.  Add the butter and mix for 2 minutes.

Transfer to a floured working space and shape and push down with your hands into a flat round shape.  Wrap with a plastic wrap and keep in the freezer for 15 minutes, or in the refrigerator for 30 minutes to rest.

Bake for 375*F for 40 minutes or more until golden brown.  Let cool.
